Craft beer’s favourite oxymoron next to White Stout makes a triumphant return just in time for the high peak of summer! After bringing the Pina colada party to the style with the New Tropical Reflex and Tropical by Nature’s Sabro-heavy hop bills previously, we’ve gone very much back to basics for our 2024 entry, Which Pendant. Our exploration of what hops and combinations work well in this cult classic style is never ending; and for this beer we decided to utilise a hot side addition of Vic Secret for a brash piney base layer, before more Vic Secret and Citra on the cold side bring a punchbowl of citrus, bright orange and pineapple to the party. Utilising our standard Polly’s Pale and Hoppy grist bill with a flourish of Crystal and Carafa Special at the end of the mash, this beer sings with the usual Polly’s checklist of tropical IPA notes, presented in a defiantly dark beer.
